Sushi Style or Rolled Sandwiches
Any slice of bread can be used for this or you can buy unsliced bread then have the bakery remove all crusts and slice it into long slices ( the opposite way we usually do it ) Fillings can be anything that appeals to children, deviled ham for example, first flatten the slice with a rolling pin then spread filling evenly. 2 green apples, each cored and quartered
32 sunflower seeds
2 – 3 fresh strawberries sliced
1 – 2 homemade googly eyes
Cut the middle out of each apple quarter apple slice to create a mouth, coat the cut gap with a filling of sunflower butter, put 4 sunflower seeds on the top of the “ mouth “ for teeth, place one piece of sliced strawberry inside the mouth for a tongue, glue each eye above the mouth with a dab of sunflower butter Makes 8 servings.

Frozen Popsicles with Coconut Ice Cream
400 ml fresh or canned coconut milk
¼ cup cane sugar or you can use Stevia , remember it’s very concentrated so add to taste
Lavender ( optional )
Blend coconut milk and sugar or other sweetener until smooth
Fill popsicle molds with small pieces of fruit leaving space for the coconut mixture to fill in the gaps, Store in the freezer overnight or until frozen solid. Get creative and experiment and your child’s next party can be filled with healthy foods.
